School TiesStudents, please direct your attention to the front of the classroom…Here to enlighten your mind and mystify your senses is the one, the only, The Principal.  The Press Room Group’s newest dining spot on Wan Chai’s Star Street pays homage to one of the founder’s mothers who was the Principal at a school in that very same spot for over a decade.  The interiors have a cool casual feel, with neutral tones, copper fixtures and light and airy tables, flanked by cosy booths with warm plaid banquettes.  But the menu and wine list are what take this restaurant’s grading curve to a whole new high.

Chef Jonay Armas, who hails from the Canary Islands, embraces the simple food and traditional cooking methods of his childhood, but with an innovative twist.  No one will be running for recess on the playground with a lunch featuring starters of Free-range 63-degree egg with ceps, artichoke heart and shaved black truffle, Smoked eel with herring roe, pineapple ice cream and tomato textures, or Foie terrine with fresh figs, ginger crumble.  But this class has only just begun. Not-to-be-missed mains include the Suckling pig with lemon puree, sautéed red endive and pomegranate reduction and Grilled kobe sirloin with foie royale & black garlic, sautéed baby carrots and turnip, both cooked to perfection. Mind open and ready for more? Sip your way through Geography with The Principal’s specially created Wine Atlas complete with hand drawn maps and the latitude and longitude coordinates of the origins of your chosen vintage.  While flavour infused desserts like Violet sponge with strawberries, yoghurt sorbet, pistachio purée and honeycomb, and Mini banana with miso ice cream, toffee rice krispies and cherry coulis create a sensory experience that would put any Science experiment to shame. If only all classes at school were this fun.  With all the courses complete, we can tell you, this one definitely makes the grade!
