Dinner is a more elaborate affair, with starters like Burrata with vine cherry tomatoes, mint and truffle oil, and Seared duck liver with Viking salt, Granny Smith apples, pea sprouts, aged balsamic, olive oil and caviar. Follow this with mains like Pan seared Tasmanian salmon with fennel, mint, and lime salad, beetroot dressing and black volcanic salt, and Grilled Black Angus beef sirloin with parmesan mash, baked onions and parsley dressing, along with organic wines and Salted caramel millefeuille for dessert.
