Diamonds in the RoughA mystical and exquisite rare gem, there’s no doubt that white truffles are considered the diamonds of the culinary world. Here’s where to unearth these gastronomic treasures in Hong Kong…

Nicholini’s
Warming the heart while enchanting the palate, Nicholini’s new Chef de Cuisine Alex Bignotti has developed a special a la carte menu and a “Chef’s Favourite” 5-course set dinner menu featuring truffle dishes that evoke memories from his childhood in Italy. Highlights include Potatoes and Castelmagno Cheese Gnocchi with Hazelnut Oil and White Truffle just like his Papa used to make, Tagliatelle with Parmigiano Reggiano and White Truffle using homemade tagliatelle freshly prepared every morning to release the full aroma and flavor of the truffles, Grilled Veal Tenderloin with Truffle Sabayon, Green Asparagus and White Truffle, Pan Seared Scallops with Jerusalem Artichoke Cream and White Truffle, and Caramelized Onion Tortelli with Parmigiano Reggiano Fondue and White Truffle. “Chef’s Favourite” 5-course set dinner: HK$1,450+10% per person. Man Wah
For a palate pleasing departure from the traditional Italian truffle dishes, head to the Mandarin Oriental’s Michelin-starred Cantonese Man Wah, where for the first time ever, Chef Man-Sing Lee, will present three exclusive dishes celebrating white truffle season. From 15 November to 14 December 2012, you can enjoy Braised E-Fu Noodles, White Truffle, Lobster and Cream Sauce (HK$1148), Pan-fried Scallop with White Truffle, Scrambled Duck Egg and Crab Coral Sauce (HK$1168), and Braised Rice Casserole, White Truffle, Wild Fungus and Dried Seafood (HK$1168) along with the restaurant’s much-adored Cantonese specialties. Hugo’s
During November and December, this foodie favourite, famed for its classic European dishes and tableside preparation, will present a series of White Truffle delicacies created Head Chef Renaud Marin. Specialties include Pan-seared Scallops with White Truffle, Grilled New Zealand John Dory with White Truffle Artichoke, and Foie Gras Cannelloni with White Truffle, in which the cannelloni tubes are stuffed with diced foie gras, chopped truffle and a rich mornay sauce. Tosca
HK’s highest Italian restaurant is preparing to take your tastebuds to a new level as well with a 5-course degustation dinner menu created by Chef de Cuisine Vittorio Lucariello. Highlights include: Potato filled with Ricotta Cheese, Egg Yolk and Parmigiano Reggiano Broth, Homemade Sabayon Tortelli, Chestnut Cream and Parsnip Foam, Steamed Scampi, Jerusalem Artichoke Purée and Grilled Artichokes, Roasted Guinea Fowl, and Green Cabbage, Pancetta, Mushrooms and Onion Purée. 5-course Degustation Menu: HK$1,500+10% per person.
